Kaakara Kaya Fry(Bitter Gourd Fry)



Ingredients :

1/4 kg bitter gourd
2 big onions
1 cup curd
small lemon sized tamarind
1 dry red chilli
1/2 tsp chana dal
1/2 tsp cumin seeds
1/2 tsp mustard seeds
curry leaves
3/4-1 tsp red chilli powder
1/4 tsp sugar(purely optional)
salt
oil

Preparation :-

1) I have choosen small bitter gourd so i just left them with out chopping.If your bitter gourd is of bigger size cut into round slices.Peeling off the bitter gourd layer is optional but it gives better taste when you peel off.

2)Heat a pan ,Add bitter gourd,curd,salt,tamarind and 3 cups of water.Make sure the bitter gourd sink in the water.

3)Now cook it for about 15-20 minutes ,By then all the water gets evaporated.

4)Take another pan ,Add some oil and fry the cooked bitter gourd pieces until they turn brown in color,keep it aside.

5)Heat a pan,Now add some oil,Add red chilli,tempering(chana dal,mustard seeds,cumin seeds) and fry until mustard seeds splutter.

6)Add curry leaves and fry for a minute.Add chopped onion and fry until it turns to light brown color.

7) Now add the fried bitter gourd pieces,Add salt(only for onion ,bitter gourd already have the salt while cooking).

8)Add red chilli powder and swith off heat after a minute.If you want it bit sweeter add sugar to it.Serve hot.

Plantain Curry (Arati Kaya Kura)



Ingredients :-

1/4 kg Plantain(arati kaya)
1/2 inch ginger piece
4 green chilli
1 red chilli
1/4 tsp turmeric
curry leaves
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp chana dal
1 tsp urad dal
salt
oil

Preparation :

1)Take a bowl ,add plantain,salt,turmeric and pressure cook it by adding some water.

2)Cut the boiled plantain into pieces and keep aside.

3)Grind ginger and green chilli to a fine paste and keep aside.

4)Heat a pan, add some oil.Once hot add red chilli,mustard seeds,cumin seeds,chana dal,urad dal and fry until they turn light brown.

5)Add curry leaves and fry for half a minute.Add boiled plantain pieces to the pan and add ginger chilli paste to it.

6)Fry for 7-10 minutes and switch off the stove and serve with hot rice.

Corn Snack


Tasty snack especially kids loves it.....

Ingredients :-

1 cup of corn
1 egg
1 medium onion
1 green chilli
1/4 cup cashew nuts
1 tsp jeera
1 tsp mustard seeds
curry leaves
corrainder leaves
salt
oil

Preparation :

1) Heat a pan,add oil to it.Now add mustard seeds,jeera and let it fry until mustard seeds splutter.

2)Add cashew nuts and let it turn light brown in color.Now add curry leaves,chopped green chilli and fry for a minute.

3)Add egg yolk to it and let it completly cook in low heat.

4)Add chopped onion and fry until onion becomes transluent.

5)Add corn to it and let it fry on medium heat after adding salt.If required sprinkle few drops of water meanwhile.

6)Finally garnish with corrainder leaves and serve.

Beerakaya Senagapappu Kura (Ridge Gourd Curry)




Wonderful mom's recipe to almost everybody :) .... Be a wonderful mom to your kid by trying this out......

Ingredients :

1/2 kg Ridge Gourd (Beerakaya) peeled and cut into pieces
1/4 cup chana dal (pachi sanagapappu) soaked for 1/2 hr
3 green chilli (Pachi mirchi) 
1 big Onion (Ulli Paya)
1 tsp corrainder powder (Dhaniyala podi)
1 tsp cumin powder (Jeelakarra podi)
1 tsp mustard seeds (Aavalu)
1 tsp cumin seeds (Jeela Karra)
curry leaves (Karivepaku)
1 tsp red chilli powder (karam)
salt
oil

Preparation :-

1)Soak Chana dal for half an hour and keep aside.

2)Heat a pan ,Add oil (amount required for frying),Now add mustard seeds,cumin seeds and let the mustard seeds splutter.

3)Add curry leaves,chopped green chilli and fry for a minute.Now add chopped onion and fry until onion becomes soft.

4)Add ridge gourd pieces and fry for about 5 minutes.Now add soaked chana dal to it and cook for more 5 minutes.

5)Add cumin powder,corrainder powder,salt,red chilli powder ,add some water if required and cook by covering with lid for about 10-15 minutes.

6)Adjust water if required while cooking.Turn off heat and serve hot with rice.

Carrot Orange Juice



Most of us don't like carrot juice straight away...But carrot is very good nutritient...Try it this way ...you love to make it again n again.....

Ingredients :

1 medium sized fresh carrot
2 medium sized fresh orange
1/2 tsp sugar(optional)

Preparation :-

1)Peel orange,clean carrot and blend it in juicer.If you don't remove the seeds in orange it gives bitter taste.Add some sugar if you want it more sweeter.

2)Serve the juice.

Cucumber Tomato Salad




Very Healthy diet....People who would like to reduce weight can add this recipe to their diet chart....

Ingredients :

1/2 cup cucumber pieces(negative calorie food)
1/2 cup tomato pieces
1/4-1/2 cup onion (depends on your taste)
2 tsp lemon juice (helps to reduce weight by improving metabolism)
pinch of salt
pinch of pepper powder

Preparation :-

1)Easy preparation and healthy as well.....Just mix all the ingredients.

2)You can have it straight away or you can keep it in refrigerator for about 10 minutes and have it.

Kheera Dal ( Cucumber Dal )



Ideal for Hot Rice/Roti.It's an awesome taste recipe...Go and Try it out....!!!!!!!

Ingredients :

1 cup moong dal (sai pappu)
1 cup kheera pieces peeled and cubed
3 green chilli
1 big onion
1 tsp chopped garlic
2 dry red chilli
curry leaves
1/2 tsp chana dal
1/2 tsp mustard seeds
1/2 tsp cumin seeds
salt
1 tsp red chilli powder
oil

Preparation  :-

1)Pressure cook Moongdal with kheera pieces for 3-4 whistles.

2)Once after the cooked moong dal is ready,Heat a pan add 2-3 tsp oil.

3)Add dried red chilli,chana dal,mustard seeds,cumin seeds and let the mustard seeds splutter.Now add curry leaves.

4)Add chopped garlic to the pan.Let it turn to light brown and dont burn too much.Now add chopped green chilli,chopped onion and fry until onion becomes translucent.

5)Add cooked moong dal,kheera mixture to the pan,Add salt,red chilli powder.

6)If you want tha dal to be thicker cook it untill it leaves water or if you want to loosen the consistency add some water and cook for about 5 minutes.

7)Turn off the heat and serve hot.
