egg (kodi guddu) pulusu


















Ideal for rice.Good with roti/parata if you make thick consistency.

Ingredients:

5 to 6 eggs (preferrably organic)
Tamarind of 1 lemon size
2 medium sized tomatoes
2 big onions
2 to 3 green chillis
1 tsp cumin seeds

1 stem curry leaves
1 tsp ginger garlic paste
1/4 tsp turmeric powder
11/2 tsp red chilli powder
1 tsp ground coriander powder
Salt to taste
Oil for cooking
1/2 cup fresh corriander leaves

Preparation :-

1)Boil eggs ,make cuts in the eggs with knife and keep aside.

2)Soak tamarind in warm water to make it to juicy.

3)Cut onions ,green chillies,tomatoes.

4)Heat oil in a pan(choose a deep pan for the eggs cook in sauce),add turmeric powder, cumin seeds ,mustard seeds and fry till mustard seeds splutter.Add green chillies, curry leaves and saute for 1 minute.

5)Add onions and fry on medium heat till they all turn brown.Add ginger and garlic paste and fry for 1 minute.
Now add tomatoes and cook untill it get soft. Add salt from above and cover the sauce pan.Then add chilli powder and coriander powder with tomatoes and mix well. Add little water if required.



6)Take tamarind juice and add juice to the pan. Also add eggs with slits to this curry.Make the curry to your required consistency level by adjusting water.


7)Let the eggs cook in the sause for about 10 mts.Cooking in the sauce make the eggs taste awesome.Turn off the heat and serve by garnishing with corriander leaves.
